But I also think they should have another villain around like Adam, except that they don't kill him that easily.
Or give us a villain the heroes actually kill. Almost every villain that appears (no matter how big or small a role) just gets murdered by Sylar. I think he should be overpowered, but at the same time, he doesn't need to run around killing or battling the villains too. Hell, volume three had an entire episode based around Sylar's plan to pick off both the heroes and villains while they're trapped in The Company building.

Which villains were killed by Sylar?
Only ones I can think of is Candice, Jesse, Bob and Arthur. Which to me, doesn't count as "almost every villain". I don't count Elle as a proper villain and the other level 5 guys were held because their powers were dangerous, not because they were villains (Echo for exapmle)
What about Adam, Linderman, Maury, Knox, Flint, Tracy, Samedi, The hunter, Doyle... just to name some.
You're just over-exaggerating.
The episode I assume you're talking about being either "The butterfly Effect" or "Duel" and in neither did Sylar plan to pick off both Heroes and Villains. In the first, he was after powers since he lost his and his assault in The Company was for this purpose, the people in level 5 that he went after, were villains.
In the later, Angela, Claire, Meredith and HRG were Sylar's targets. The fact that any villains were included at all was due to HRG sending them after Sylar. Again, it was no plan of Sylar's to "pick them off".
What you need to remember is that Sylar's main goal is for power and he doesn't align himself with either side unless he has a reason to. This leaves him to fight whoever he wants.
Life isn't black and white you know.
